Yummy Banana Cake...


It never bothers me any more when bananas go way past their best with black skin and a mushy inside, because I know they can be transformed with easily the best cake recipe ever. It literally takes 5 minutes to assemble and about 45 minutes to cook.  With the country enjoying a baking obsession in the advent of The Great British Bake Off as well as the ever popular Lorraine Pascale, this is the perfect recipe to impress your friends with.

I found it on allrecipes which provides a good source of interesting dishes to try out from the world over. When you don't fancy trawling through the recipe books this is a really useful resource. 


Ingredients
  • 125g butter
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 2 very ripe bananas, mashed
  • 190g self raising flour
  • 60ml milk
Preheat the oven at 180


Melt the butter, sugar and vanilla extract in a heavy based saucepan. Stir regularly then take off the heat and add the egg, flour and the milk. Mix well then add the bananas (I actually added a couple of very ripe apples today which worked beautifully).


Spoon into a lined loaf tin and pop into the oven to bake for about 45 minutes, or until golden and the skewer comes out clean.


Let it cool for a few minutes then dig in to this wonderfully moist, sweet slice of goodness.
