One of our favourite days of the year has finally arrived! This morning I got up super early to make these for our breakfast, I served them with maple syrup but lemon, nutella or honey are all acceptable. Very quick and easy they come out more like American style pancakes which we love in this house!
150g Plain Flour
1 teaspoon Baking Powder
2 tablespoons of caster sugar
a pinch of salt
25g melted unsalted butter
A pinch of fresh lemon zest.
First up, put all the dry ingredients together in a batter bowl and mix with a spoon. Then add the wet ingredients and whisk by hand until you get a smooth batter. Finally mix in the lemon zest blueberries or strawberries.
Warm up a small non stick frying pan with a tiny stick of butter. Take a spoon full at a time place in the pan and flatten with the back of the spoon. Fry until a golden colour on both sides. Keep warm in foil on a plate until you are ready to serve.
