Recipe: Scrummy Flapjacks

Matilda is not a fan of cereal, no surprise as neither are her parents. So one way of ensuring she gets some oats in her system is by making her home made Flapjacks, which she gobbles up without any problem at all. This is our favourite recipe easy peasy, and one that children can thoroughly involved. Matilda loves to help cook particularly in the stirring and licking of wooden spoon tasks.




Ingredients

6 tablespoons of Golden Syrup
200g Unsalted Butter
330g Porridge Oats

Pre heat your oven to 180.

Line a small swiss roll tin or any other baking tray with parchment paper. Gently warm up the Golden Syrup (I sometimes split the measurement with Agave Nectar when I'm feeling a little virtuous) and butter until it's all melted with the aroma of sweet caramel permeating your kitchen. Place in the oats in a large mixing bowl then pour the syrupy mixture over. Mix well with a wooden spoon until the oats are glistening then pour into the baking tin and spread out evenly with a palette knife or the back of a spoon.

Cook for about 25 minutes or until golden on top. Then leave to cool completely before cutting as it'll harden up a little, though gooey is best in our house!

Enjoy with a steaming hot cup of tea in your prettiest cup.
